Cheesy Grits with Maddie Day



Maddie Day is back with us today to tell us how to make delicious cheesy grits to celebrate the launch of her new book, When the Grits Hit the Fan. Isn't that a great book title?


Thanks so much for having me back! In the Country Store Mysteries, Robbie’s assistant chef, Danna, makes creamy grits with cheese that prove super popular with the customers in Pans ‘N Pancakes. Here’s the recipe.
Cheesy Grits

Serves six.
Ingredients
2 cups chicken broth
1/2 cup whipping cream
1 cup Original Grit Girl Stone Ground yellow grits (or other good non-instant grits)
2 cups grated white cheddar cheese

Directions
Combine broth and cream in a large sauce pan; bring to a boil. 

Stir in the grits, stirring constantly. Cover the pan and reduce the heat. Simmer ten to twenty minutes, stirring as needed. Stir in cheese. 

Option: Serve with shrimp, eggs, sausage, or whatever you like.

    1. You could easily swap out the chicken broth and use veggie broth instead.
