Speaking of Cocktails: The Babs Bellini



Marla Cooper is here to celebrate the release of her new book, Dying on the Vine, and she has an extra special drink recipe for us...

I think my second book has a drinking problem. Well, okay, it’s not time for an intervention or anything, but since it’s set in the California wine country, there’s a lot of wine in it. You might want to go ahead and pour yourself a spicy zin or a crisp sauvignon blanc before you get started, because you’re going to want one when you start reading the wine tasting scenes.
There are also two different signature cocktails mentioned in the book. And since this is clearly a blog that can appreciate a good cocktail, I couldn’t resist the temptation to share a recipe for the Babs Bellini.
See, Babs Norton is a rival wedding planner in Dying on the Vine. She’s kind of a diva, the self-proclaimed Queen of Wine Country Weddings. And not to spoil it for you, but, well, she ends up kinda dead. 
Of course, Babs was the consummate event planner, and as such, she’d left detailed instructions for her funeral—including a signature drink for the after-funeral reception at her sister Margot’s house. (Margot ends up pretty buzzed herself, and ends up belting out songs and slapping a waiter on the butt. Hey, we all process grief differently.)
Anyway, in honor of Babs Norton, may I present, the Babs Bellini: perfect for Sunday brunches and afternoon funerals. The secret ingredient? A little bit of aperol to keep it from being too sweet. Just like Babs would have wanted.

THE BABS BELLINI
(5 servings)
  • 1 bottle prosecco or sparkling wine 
  • 1 cup frozen peach slices, thawed
  • 1/2 cup water
  • 1 1/2 t sugar
  • 1/2 cup Aperol
  • 1 lemon, thinly sliced
Blend the peach slices, water, sugar and aperol in a blender. Add 2 tablespoons puree to each glass, then top with the sparkling wine (slowly so it doesn’t fizz up). Garnish with a lemon. Slap a waiter on the butt.

  1. Another book to add to the TPR pile. Marla and Babs both seem to have a great sense of humor. The bellini sounds terrific, just need to make sure a waiter is handy when I drink it! Love this post.
